Vieilles vignes de GAMAY NOIR à jus blanc, âge moyenne : 50 ans

Terroir

Aire d’appellation de la Côte de Brouilly sur les coteaux pentus de la Colline de Brouilly, avec un beau sol, bien drainé, de pierres d’origines éruptives (Diorite Porphyre) mélangées à de l’argile, expositions Est et Sud

Culture

Nos vielles vignes sont plantées à une forte densité de 9 à 10.000 plants/ha et conduites en taille gobelets bas, traditionnel en crus. Les plus jeunes vignes sont palissés et taillées en cordon royat. Selon la specificités de la parcelle et les pentes nous effectuons des labours superficiels, griffages ou decavaillonages au treuil. 
Les parcelles sont partiellement enherbées et la vie du sol est stimulée.

Vinification

Les vendanges sont 100% manuelles. La vinification se fait par gravité dans notre cuvage à étages, maceration partiellement en grappes entières de 13 à 15 jours, pressurage douce avec un pressoir pneumatique, l’élevage se fait pour 1/10e en pieces bourginnones (fût de chêne français) et pour le reste en pieces de 1 à 5 ans. Affinage pendant 12mois en fûts de chêne.

Assemblage

Cette cuvée est issue d'une double séléction. Une séléction de vins de nos meilleures parcelles de Côte de Brpuilly est choi pour un élévage en fût pendnat 12 mois. La deuxième séléction a lieu au moment de la mise en bouteille. Seulement les meilleurs fûts sont retenues pour cette cuvée raffinée, la quintescence de la Côte de Brouilly.

Dégustation

Un côte de Brouilly complexe et raffiné aux arômes de fruit rouges et noirs, graphite, de notes de violettes, pivoine et souligné par de léger notes toasté. Bouche charnue et riche toute en conservant beaucoup de pureté et de class. 
A déguster idéalement après 3-10 ans de garde (voir plus sur les meilleurs millésimes)

Accords mets et vin

C’est un excellent vin pour vos repas en famille ou votre soirée entre amis. Un vin gastronomique qui accompagne vos viandes grillés ou en sauce, canard, boeuf, pigeon, gibier mais il s'associe aussi très bien avec des creation culinaires plus originales comme des champignons grillés, côte de bœuf en croûte d'herbes, pigeonneau rôti et son jus de cuisson, comté, fromages de chèvre.

Medium to full-bodied, supple and fleshy, it's deep and structured, with a generous core of fruit covering its finely tannic bones. Today, its élevage simply lends it a bit of a Burgundian accent, and even if my personal taste still inclines me to the classicism of the regular cuvée, there's lots to appreciate here. »

It feels long and tender in the mouth with a residue of sea salt on the finish. I would not assert this to be superior to the regular Côte de Brouilly, just a slightly different perspective. »

The oak here is present but neatly assimilated, less creamy in texture than when I tasted the wine from barrel. The palate is medium-bodied with a succulent and quite fleshy entry. The acidity is nicely judged with peacock's tail of cranberry jus, wild strawberry and quince on the sustained finish. Excellent. »

« The 2012 Cote de Brouilly Cuvee Zaccharie is picked by hand from the vineyards on Mont Brouilly, and this blend comes from the oldest vines in “La Chapelle” and “Godefroy.” It undergoes a longer elevage in 228-litre casks with 10% new oak. It has a noticeable deep color. The nose makes an immediate impression, revealing darker fruit than its peers: blackberry leaf and wild raspberry, touches of bilberry in the background, but all well-defined. The palate is medium-bodied with commendable fruit intensity for the vintage. It is quite masculine in style, unashamedly so, with that dark berry fruit continuing from the nose, the finish demonstrating fine backbone, if not quite the persistency or grace of a top flight Thivin. Still, this is a fine Cote de Brouilly. Drink now-2018. »
