An old cherry tree, two cadoles (small stone built vineworker's shelters), wondeiful exposure to the east on a middling slope and pink granitic sand characterise the 3.5 hectares of Thivin Brouilly vines that face Mont Brouilly. Year after year this very feminine wine exudes dominating flavours of fresh grapes and small red garden fruits.
Because vinification at Thivin is entirely carried out by gravity in order to keep the bunches of grapes whole, (this means that expert hands have harvested the bunches) the wine is conferred with a finesse and delicateness that is protected in stainless steel vats throughout the winter; it is then bottled at the beginning of the spring.
Through this, the wine retains its fruitiness for 4 to 6 years and makes an excellent companion for refined dishes such as free-range chicken in cream sauce with wild mushrooms. Serve at between15 and 18°C.
